Is it difficult to be vegan in Costa Rica?

I know that Costa Rica is pro-environment, but because they're a hispanic country, chances are they eat lots of meat, but since I'm vegan and I want to study/work abroad in Costa Rica, how hard would it be to live in Costa Rica as a vegan? Also, is Colombia vegan friendly by any chance?
